The Midwest has reached the portion of spring where otherwise warm and sunny days are interrupted by howling wind gusts. The type of wind that makes me reconsider my deep desire to travel back in time and live in an 1850's log cabin in the woods. 🌲

Anyway, thank goodness for modern insulation — and appliances while we're at it. No wood-burning fire needed to whip up a batch of Air Fryer Chicken Breasts!

This is one of my favorite "It's 4pm and I've got nothing planned for dinner." recipes. 😰 All it takes is seasoning a few chicken breasts then popping them into the AF to do their thing while I whip up a couple of veggie sides.
